<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><font size="3"><span style="FONT-FAMILY:'新細明體', 'serif';">「</span><span style="FONT-FAMILY:'新細明體', 'serif';">菜系</span><span style="FONT-FAMILY:'新細明體', 'serif';">」</span><span style="FONT-FAMILY:'新細明體', 'serif';">的形成，不外乎在特定的地域中，因族群、宗教、文化、民情、風俗及環境的差異，造成取材用料的不同，而形成的一種味蕊定調。客家菜之所以能被突顯，更因為前述幾項因素在客家族群演進過程中，特別明顯與強烈所致。</span></font></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">這些年，我參與非常多客家鄉親的美食活動，甚至更深層地研發、研討與教學，越是接觸、越有情感，因而發現客家人對祖制的尊崇與自豪，來自於他們堅毅刻苦的傳承。然而時代的蛻變，使得年輕的一代，距離那些來自於山凹的故事，似乎漸行漸遠。老一輩對客家文化的堅持，卻又是那麼強烈與費心。如何喚起年輕一輩、甚至其他族群對客家文化的重視，是我們更需要努力的話題。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><font size="3"><span style="FONT-FAMILY:'新細明體', 'serif';">在我推廣美食工作的這二、三十年間，看到了近在咫尺的香港、日本、韓國、新加坡、泰國、還有中國大陸，更看到了遠在紐約、拉斯維加斯、巴黎</span><span lang="EN-US"><font face="Calibri">……</font></span><span style="FONT-FAMILY:'新細明體', 'serif';">等進步城市在美食蛻變的過去與現在，一本本不同年代的食譜，會因經濟、交通、科技及新觀念的注入，而有所演進。總而觀之，我的結論是：越開放、越富裕的地方，其豐富的食材運用、健康衛生的觀念、器皿烹調的應用，都造就了數不盡受世人讚許、如藝術品的美食創作。</span></font></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><font size="3"><span style="FONT-FAMILY:'新細明體', 'serif';">回想五年前，我在一份資料中看到行政院客委會為了明確定義</span><span style="FONT-FAMILY:'新細明體', 'serif';">「何為客家菜？」辦了幾場討論會，一派人堅持客家人的「肥」「鹹」「油」「四炆」「四炒」的傳統；另一派人則說客家人此刻住在平地的比山上還多，九孔龍蝦為何不能用在客家菜中<span lang="EN-US">……</span>，意見分歧、各說各話，如今五年過去，這樣的分歧依舊存在。<span lang="EN-US"></span></span></font></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 廿多年前，台灣開放探親，陪著爸媽到西安探視四十年不見的大舅，那段日子天天吃麵，從羊肉泡饃到褲帶麵都吃了，舅看到我如此癡麵，問我台灣是不是沒麵好吃，我回說，台灣的麵不僅好吃，花樣可多著呢！那一個星期的相聚，我講了好多好多台灣的事兒，尤其是講到台灣的涼麵好吃過四川，而且吃完還不冒汗，更加的讓大舅期盼到台灣一遊。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 台灣什麼時候開始吃麵食，又怎麼會有好吃的涼麵呢？</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><font size="3"><span style="FONT-FAMILY:'新細明體', 'serif';">一九四九年，國民政府為了安置大量由大陸來台的軍眷，在台灣的各個角落，建了聚居的眷村，而這些軍眷落戶之後，一個個孩子出生了，微薄的糧餉，難以面對孩子成長後越來越重的家計，許多女眷，便投入了家庭副業的行列，打毛衣、做聖誕燈、做火柴盒</span><span lang="EN-US"><font face="Times New Roman">…</font></span><span style="FONT-FAMILY:'新細明體', 'serif';">等，有的就在自家門口擺攤賣陽春麵、水餃、包子、饅頭、燒餅，還有就是涼麵。</span></font></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 當時台灣的進口商很少做進口麵粉的生意，因為那個年代台灣人幾乎不吃麵的，而軍眷每個月可配給到美援的麵粉，只要是軍眷戶的成員，依年齡、眷補證分大口、中口、小口，許多南方的人是吃不來麵食的，最主要原因也是不會做吧。所以做生意的人，就可以用比市面便宜的價格買下這些不吃麵眷戶的糧票，來做買賣啦！</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 涼麵是個多味型的小吃，它看起來簡單，其實它的調味醬汁至少有十種以上，而且不油膩，麵條也講究得很。台灣到處有許多涼麵攤，包括許多有名的店我都嚐過了，但我還是獨鍾眷村的涼麵，而其中又以台南二空眷村的涼麵為其之最。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 二空是位於台南空軍基地旁 三公里 處的一個村落，雖只是一個約六、七百戶的村子，光是賣涼麵的就有五家之多。早上天沒亮，他們會煮一大鍋水，水滾了放少許的鹼，<span lang="EN-US">(</span>鹼可使麵不發酸，且增加麵的勁道<span lang="EN-US">)</span>再將麵條下鍋，煮麵的時候得邊煮、邊撈、邊加冷水，如此都是為了強化麵條的彈性；麵煮好了，將麵攤在像會議桌一樣大的門板上，旁邊放兩支大電風扇吹著，淋上大豆油後兩雙手各拿一雙筷子，用很快的速度，將麵撈起齊眉的高度，再快速的抖落。雖然常被燙著，但還是得一直重覆這動作，一直待整批麵條被風涼了後，就大功告成了！<span lang="EN-US"></span></font></span></p> 
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 而調味又是另一個學問了。涼麵所需的調味有淡醬油、糖水、檸檬水、蒜水、酒水、香油、芝麻粉、芝麻醬、花生粉、花椒粉、芥末醬，吃辣的就再加些辣椒油，所有的調味料與麵摻拌的時候，其實就開始享受了，因為每一調料的香一陣一陣，突然芝麻香、突然檸檬香、接著花椒香、吃到嘴裡一會兒甜、一會兒麻、一會兒又有微微的嗆<span lang="EN-US">……</span>看似一盤微不足道的麵，確有那麼多元的香型呈現，像霧又像花。了不起的是那麵條半吸半吮的入口前，你的唇邊就可感受到那麵條矯傲的挺力，當你再咀嚼的時刻，那老板抖動麵條的那股「勁道」，似乎和我們的齒頰卯上了「力道」。<span lang="EN-US"></span></font></span></p> 
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 台灣涼麵攤到處都開著，可是現在的麵條是由工廠做的，調味只簡單的用醬油摻著芝麻醬，味道泛而無味，只有少數的幾家還能留些過去老人家留下的感覺。<span lang="EN-US"></span></font></span></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;<strong>&nbsp;&nbsp;&nbsp;魚湯</strong>，名字簡單，卻是此店的招牌，用的是便宜、新鮮、蛋白質豐富的吳郭魚，煎炸後使得魚肉酥香，再用高麗菜、紅蘿蔔和豆腐加水同煮二十分鐘，由於高麗菜和微炸過後的魚同煮，盛溢出的鮮香是葉嫩湯甜，吃時將魚撈出，另用盤盛，放眼看去，每桌客人毫不留情、吃得祇剩魚骨交錯。<span lang="EN-US"></span></font></span></p> 
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:'新細明體', 'serif';"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong>筍片炒肉</strong>也是敏忠點菜率極高的菜色之一，木柵文山的綠竹筍也是出了名的農產品，脆甜可口的程度絕不遜於盛產竹筍的竹山，李唐慶用刀順絲切筍，先川後和肉片大火爆炒，起鍋前打以薄芡，看似不起眼，但吃來清爽間帶著文山筍的竹鮮野味。<span lang="EN-US"></span></font></span></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 燒餅得發油麵酥麵，師傅得紮紮實實地擀麵，重疊成形，撒些芝麻，交給另一個師傅，先在爐邊焙烤預熱，再用火叉一個個推到烤爐中明烤，烤好時燒餅烤得像生了氣的河豚；另一個師傅用剪刀延邊橫腹剪一刀，一股熱氣瀉將出來，清楚可見燒餅的結構是一層一層比紙還薄的油酥麵重疊而成，芝麻的仁香著力在酥脆微焦的外皮上，餅心的鬆軟夾著炸好清脆的油條，那由外到內的每一個層次，就像地理老師介紹億萬年的地質層一樣，一層一個代表。吃時不論男女，都顧不得形象，把嘴張得老大，像鯊魚般的撕咬，不留心的芝麻留在嘴角，眼珠子還琢磨著下一口該從那兒下口。</font></span></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">這店的燒餅好，究其因，他用的是汽油桶做的烤燒爐，烤的熱氣因為有口可洩出，火熱是活的，烤出的燒餅自然有生命、有口感。許多店家為了快，用密封式的烤爐，那味兒和香，絕沒傳統老法的好吃紮實。</font></span></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><font size="3"><span style="FONT-FAMILY:新細明體;">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;沒關窗帘，想讓曉光叫醒我，看王建民今年首戰紅襪；床頭的鐘指著六點鐘，還有一個小時開戰，我披了件單衫到樓下新開的早餐店，叫了兩顆荷包蛋、一杯綠豆沙，我喝了口綠豆沙，哎呀！奶太重、味太甜，綠豆的樸實完全沒了。那端上來的蛋，蛋黃已被擠破，和整個蛋白混壓帶擠成干干扁扁的，沒有焦黃，聞起來腥腥的</span><span lang="EN-US"><font face="Times New Roman">……</font></span><span style="FONT-FAMILY:新細明體;">。平常不在台北到處林立的早餐店吃早餐的我，後來和朋友聊了，才知道早餐店的蛋都是這個味兒！</span></font></p>

<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 我永遠忘不了四十年前念小學時的中午時分，期待著爸爸送來他親烹裝置的便當盒，便當盒中常有爸爸用「心」煎出來的那顆荷包蛋，蛋黃既圓且膨的挺著，蛋白起伏的圍拱在四週，蛋邊帶著一點微黃略焦的火候呈現，當我用筷子將蛋黃分開兩半，蛋黃成擬且脂的糖心，反折出的色澤，宛如一五月圓夜的月光，因為爸爸在煎蛋時，不放任何調味，只待蛋起鍋前的一秒鐘，從鍋邊嗆下一匙醬油，當醬油噼噼啪啪延著鍋邊順勢而下，熱的鑊氣已將醬油香提到最高點，當冒著泡的醬油一沉到鍋底，蛋與醬油的接觸僅在髮指之瞬間，即刻將蛋滑進便當盒，蓋子即刻蓋上，那便當的米飯，會浸淫出一股股非常有意思且不易形容的氣味！</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 「蛋」基本上是個密度高且質可多變的食材，所以熱的穿透是須要掌握技巧和時間的，火候太大，蛋的外層都煎焦了，蛋黃還流生著；用小火煎，蛋無彈性水份流失，吃來無勁且腥。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 煎蛋最好用中華圓鐵鍋，而非平底鍋，因為蛋黃沉，它會順鍋中凹，乖乖的躺在鍋心並在蛋白的中心，而圓鍋的弧度，更可使熱源能均勻的分佈，大家有個誤解，以為平底鍋的熱度較均勻，其實平底鍋的熱分佈，最高溫處不是鍋心，而是鍋邊，以許多用平底鍋煎蛋的人，常常把蛋煎得邊都焦了，蛋心還生的，簡單的畫個圓您就啦！</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 煎蛋炒蛋都有個重點，油不能少、火不能小，因為蛋的本身最重要的是水份，用慢火、又少油，蛋水份會流失到乾，那蛋吃來粉而不滑，而油多能封住蛋的水份，且因油的媒介，使得「熱能」即刻快速穿透，蛋的香味就順勢而出了，煎好的蛋油多，可用一片土司兩面沾一下，表面的油份會吸去大半，而不失風味。當然還有許多技巧我不贅述了。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 在外不易吃到好吃的煎蛋不說，現在找一道好吃的蕃茄炒蛋也要靠運氣了。有次到亞都名廚開的餐廳，叫了份蕃茄炒蛋，菜上桌，我一看，心想，壞了！他家廚師放了半碗的蕃茄醬，燒得紅嘟嘟的，我楞了一陣子，因為蕃茄炒蛋加蕃茄醬是這些年來，那些不入流的餐廳小廚搞的名堂，而且到處都比難吃的！怎麼這威名四方的大廚開的店，也同流合污了呢？</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 蕃茄炒蛋最有意思的是蕃茄半炒半燒之後，把炒蛋融和蕃茄，釋放出庶民土壤中的野果味，那茄酸沒那麼勁，卻來得巧，那炒熟亦軟的蕃茄所釋出的茄汁，被先炒好的蛋蓉吸附之後，其香郁遠勝過鮑參燕翅；而今一撮蕃茄醬，打破了所有氣味的默契，真可謂一顆老鼠搞壞一鍋湯啊！最可笑的是第二天的早上開車時，聽到收音機中的「美食專家」教大家做蕃茄炒蛋，其作法是：「我將蕃茄先用蔥薑炒熟後，把打散的蛋汁淋下，即刻加入蕃茄醬，快速拌炒後，就成了美食家最愛的蕃茄炒蛋了！」這樣的烹調觀念，不知會誤導多少愛好品嚐美食的聽眾。</font></span></p>
<p class="MsoNormal" style="MARGIN:0cm 0cm 0pt;"><span style="FONT-FAMILY:新細明體;"><font size="3">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 雞蛋，這個看似普通的食材，許多過去的皇帝，他們從養雞的飼料、到圈養的環境，都非常講究，對蛋的烹製方法更是有所要求。曾幾何時，我們要吃個好蛋都難了。進入美食的領域得試著做些簡單的蛋料理，我把蕃茄炒蛋的作法簡述如下。</font></span></p>
